Whether you call it a roux or a Mornay sauce it’s most definitely the best way to make a Mac & Cheese in my opinion.

Additional Tips:
1. Make Sure to sift your flour so you don’t have any clumps.

2.) you want to use a little less flour than than your butter so you can get a nice paste consistency for your roux.

3. Use cold mix as it’s easier to manage than warm milk.

4.) You can use half & half if you want it more creamy

5. You can add more milk or half & half if you want it soupy.

6. Only seasonings you really need is salt & pepper for a basic Mac & Cheese, everything else is just extra.

7. The only cheeses you really need are a cheddar of your choosing and mozzarella for that classic cheese pull. For a basic Mac.

8. You also want to toast your butter for a about a min or 2 to get out that raw flour taste.

My mom made that blonde roux for her “cheese sauce” for 50 years. Her Mac-n-cheese was the family favorite every holiday. 🙂 Thank you for the memories.

when people in my family made Mac and cheese it was gross. but everyone else raved about it even though it was plain pasta baked with shredded cheese. it was dry and grainy. this is the type of Mac and cheese I would enjoy.
