Papa Bill's Family Favorite Coleslaw Recipes | Mom Bates Makes Easy Southern Coleslaw

Mom B joins us again for one of my favorites that I grew up eating. You can't have a cookout without coleslaw and we didn't just have one slaw, we always had 2! This is another recipe passed down from my grandparents, this time it was from Papa Bill, and his convenience store/grill/restaurant in South Carolina. I grew up loving the sweet slaw, and as I've gotten older, I have started eating more of the vinegar slaw. If you try them both, let me know if you have a favorite!

SWEET COLESLAW:
A must for bbq sandwiches, great on hotdogs, great with fried foods and seafood as well! This is the one and done! If you only make one make this one!!!

1 large Cabbage head, shaved or finely chopped.
1 1/4 cup Dukes Mayonaise
4 tsp distilled white vinegar
1/2 cup sugar
1/4 tsp mustard powder
1/3 cup grated or diced carrots
1/4 cup sweet relish
Salt to taste (start with around 1/4 tsp)
1/2 Tbsp Celery seed optional

You can mix ingredients all together in no particular order and stir to combine. I do it a bit different. My preferred method is to whisk the sugar, mustard, salt, and vinegar until sugar dissolves. Whisk in the Dukes mayo and relish, and this is your sweet dressing. When ready, or a few hours before serving, pour dressing over the chopped cabbage and carrots and stir to combine. If you refrigerate for around 2 hours it really makes it complete in my opinion!

PEPPER AND VINEGAR SLAW:
A tangy, pepper taste, I love with seafood, hotdogs, etc.

1 head cabbage shaved, 1/4 head purple cabbage optional.
1/2 cup mayo
1/2 cup white vinegar
1/2 tsp salt
Black Pepper to taste (start with 1/2 tsp but it will probably need more). You should be able to see the black pepper on the cabbage without searching for it, that's kind of when you know you are close to enough.

LIME AND PEPPER SLAW.
Perfect for grilled or blackened seafood, fish tacos, shrimp tacos etc. It tastes light and fresh.

1/2 head cabbage shaved
1/8 head purple cabbage shaved
1 Tbsp mayo
3 Tbsp white vinegar
Juice from one lime (around 2 Tbsp)
Salt to taste (start with 1/4 tsp)
Pepper to taste (start with 1/4 tsp
Optional* If you like cilantro, adding 1/4 cup of chopped fresh cilantro really sets this apart! Whitney can't stand cilantro, but I love it. A little research taught me that to a large percentage of people, cilantro tastes like soap. So for Whitney, I just add a few Tbsp of carrots for color!

Zach, I think it’s wonderful that you made a tribute to your Papa Bill and Mama Jane through the different Cole slaws!!! My grandma had dementia and it broke my heart when she couldn’t remember who I was. She was an amazing woman, I miss her very much.

I am a caregiver too dementia patients and treat each one as if they were my grandparents.

Love your mom and dad, both are very special people! I enjoyed this video. My mom used to put a bit of white vinegar and sugar in her slaw, I pretty much try to make it as good as she did. By the way, my parents were born and raised in Tennessee. They moved to Michigan for work in the 50's and lived here for the rest of their lives. I do have a brother and his family that moved to Tennessee in the nineties for work. They still live there, in Franklin. Funny how things happen. Anyway, I wanted you know, that I was raised with southern parents. I consider myself southern, with northern roots. Again, loved this video with both you and Mama Bates ❤️

About 55 years ago, our family went to Florida on vacation. We stopped at a diner. I ordered a slaw dog from the menu. When I got it, the slaw was pink! The waitress said it was regular mayo coleslaw with catsup added. It was FANTASTIC! I occasionally still make slaw for hotdogs the same way.

The slaw recipe is a beautiful tribute to your Papa Bill.
I enjoy seeing how different regions of the country make their version of recipes. I'm from the midwest and have never had slaw without sugar or with sweet relish in it. I will give both versions of your slaw a try. We can get Duke's thru Sam's Club online, but Hellman's is the mayo in my area.
We make our slaw with cabbage (green & red), carrot and a little bit of onion. The dressing is mayo, sugar, vinegar (usually apple cider which makes it sweeter, and s&p.
We also make a sweet 'n sour slaw which is made with a cooked dressing of oil, vinegar, sugar, celery seed, dry mustard and s&p. In the midwest sweet 'n sour slaw is usually available at the local grocery store deli counter. This one also has green pepper added.
Every week I look forward to your new recipes. I enjoyed seeing Mama B cooking with you today and sharing family memories.

I'm like your Mama...I craved coleslaw when I was pregnant. Sonny's BBQ had my favorite. I had a dream about Papa Bill and Mama Jane last night...I just remembered when watching this. They were sitting at a counter in a diner and he was telling stories. When I woke up I started praying for them. They are such a sweet couple and I love seeing all of ya'll sharing stories about them. Isn't it funny how God will lay someone on your heart? Bless them!! I will have to try his recipe. I usually do sugar, vinegar, real mayo, and salt/pepper. Never tried relish before. Blessings!

As a pro Chef (college degree) I've been impressed by you ✌ In Culinary School, we learn the 'why' of things (its an Applied Science degree) so I will share in case you or anyone are interested. Cabbage, when an acid (vinegar for example) is added, the vinegar leaches the water from the cells of the cabbage and this is why the longer it sets, the more liquid is in the bottom of the bowl😊 I usually do mine the night before or the morning of so it flavors through, like your sweet Mom mentioned! I love all the slaw❤ What a great video you two!
