What makes Italian food, "Italian food"? Its so important to recognise that its about SO MUCH more than pizza and pasta. More than anything, Italian food is about culture; an experience which immerses you entirely in history and therefore tradition and maybe most importantly, love.

This is a candid vlog, where I talk you through the importance of understanding how different Italian food is across each region and even more so, across every small town. It is always part of a larger story, and will be sure to make for lasting memories. When you visit Italy, try to steer away from the tourist traps and stereotypical dishes. Find a local, talk to a bus driver even, and you'll uncover the authenticity you've always craved and it will open your eyes to the Italy everyone should know and love.
Dishes which have been in families for generations, restaurants that are like institutions, a second home to the locals and of course FLAVOURS like you've probably only ever dreamed of.

Go on, I dare you, enjoy Italy the RIGHT way. Don't be a tourist, be a local and it will open you up to a whole new world.

Italian cuisine is simple, flavorful, uncomplicated pure delight that uses only fresh available food and wastes nothing. It is tradition on parade.

Here are some rules of Italian cuisine that all should know:
- Pineapple *does not* go on pizza
- Cream is not used in carbonara
- Chicken does not go with arrabbiata
- Cheese does not go on any dish containing fish or seafood
- Spaghetti is eaten using a fork, never a spoon, and should never be cut up

Italians are very proud of their cuisine and don't like to see the commission of food crimes.

One of my grandmothers was from San Gimignano (Tuscany), my other grandmother was from Filadelfia (Calabria). The food they cooked was very different. Growing up in America, I got to experience very different Italian food depending whose house we ate at when we visited my grandparents.

Very interesting. Being from Uzbekistan, the country on a Silk Road where rich Italians were buying silk from China and caravans were passing Samarkand etc I think we have influence of Italian food as well. And we also had differed "kingdoms" or khans like Bukhara Emir, kokand khans etc which merge now to one country Uzbekistan with different dialect traditions and food. Thank you

100% true, what you said - That exists also in Switzerland - There are for example so many kinds of cheese here in Switzerland; there is no Swiss Cheese.

I am in St Louis Missouri US. There is an area of town here called "the Hill" (small hill there)..It was the Italian neighborhoods of St Louis. There are some great restaurants there. The majority of them are Sicilian or South Italy cooking...but..There is Zia's who cook things like the North. I have visited only north Italy..Genoa...and Venezia, Udine. and just between those regions, there is difference in foods. Friuli region..wild game(meat)..polenta..more cream based sauces.. In St Louis, we also have a large Greek Orthodox church that has annual festival with authentic food. Also St Louis has many newer immigrants from African nations and restaurants as well. I love learning about the many cultures through their food..(the best way). The best thing about "Italian food" is that it is FRESH.
