These class french patisserie cakes were invented to commemorate the Paris to Brest Bike race in the early 1900s. This version has a nutty topping which adds a delicious crunch. Enjoy!

0:00 - Introduction
0:33 - Slice the tops off the choux rings (see previous recipe)
0:57 - Mix the creme patissiere and praline
2:15 - Whip up the whipping cream
2:54 - Dissolve the gelatine in some water
3:24 - Fold the whipped creme into the praline mixture and reserve in fridge
5:48 - Melt the sugar into a caramel
6:40 - Crush the nuts
7:38 - Dip the lids into the caramel and then into the nuts
9:01 - Pipe the praline mousse into bottom half of the choux rings
9:57 - Sprinkle the tops with icing sugar and cocoa and place on the bottom halves

Delicious!! You use 40% fat whipping cream aren't you? It is thicker then 35%
I had to laugh when you had no place for the bowl....the same problem overhere 🙈
