This is video #4 in my Slim You in '22 Series! It's called What I Eat in a Day to Stay Slim After 60...Easy, Healthy Meals. In this video I show you What I Eat in a Day, and my easy plan for breakfast, lunch, dinner and snacks. In the past I felt I was addicted to certain foods, but since I have gone low-carb, I pretty much eat what I want and am rarely hungry.

💝 SLIM YOU IN ’22 VIDEO VIDEO “CLASSES”

Garlic Chicken Breasts with Mushrooms
2 Large Chicken Breasts (cut in half horizontally)
Pinch Salt and Pinch Pepper
¼ c Garlic Infused Olive Oil
½ Cup Diced Yellow Onion
2 Cups Sliced Mushrooms
2 Tablespoons of White or Cooking Wine

In large skillet, add 2 teaspoons of the infused olive oil to pan over medium/high heat.
Add chicken and sear on both sides until lightly browned and thoroughly cooked (takes 8-10 minutes and there should be no pink inside). Remove chicken and tent with foil to keep warm. In same skillet, add remaining olive oil, onions and mushrooms and cook until mushrooms begin to release their liquid. Add cooking wine and reduce heat.

🥴 turning 70 in July !!! I walk 6 miles 3 x a week & eat small portions twice a day. I dress nicely when appropriate & wear my beloved jewelry as I please! I’ve always been conscious of my weight & exercise. Live each day with gratitude and happiness. I enjoy watching your videos though ! 😊

Hi Beth. Well I'm staying the course with my IF and have lost 63 pounds since last May 6th. I start my day with a frozen berry mix (Costco) and almond milk shake (I add GNC banana cream pie protein powder). Then supper is my protein with steamed veggies. I don't crave sugar anymore. I go to the gym now on Monday, Wednesday and Friday for 1 hour cardio on the bike and treadmill (7 miles). And I do my batwing weight exercises and leg resistant band exercises you showed. I'm doing the work and getting the results. You've been an inspiration on my journey. ❤ from a Canadian sugar addict.

Lol! So true about the Apple! Now that I’ve gone more low carb, mainly cutting out breads, starches and grains, an apple tastes like pure joy to me. 🤣🌺😘

Thanks Beth! I quit sugar about 1-1/2 years ago. My skin is better along with other health benefits. I don't eat anything packaged or out of a box. All fresh. Once you get use to it all that other food tastes like junk. Your right, fruit does taste better after going off sugar!

What a lovely, sweet and classy lady you are, Beth. I tell my two Daughters about you and how much I enjoy your videos. You pick me up when I’m feeling down. I lost my stepfather, mom, then my precious Son (to glioblastoma) and then lost my husband. Had lost my dad years ago. We have to keep going for our families and God, family and good friends help a lot. I feel like we would be great friends if we lived near one another. Thank you BETH, for this very informative and helpful video. I appreciate you preparing the meals as hard as it was to do.
My “What I Eat/Drink in a Day” is as follows:
Because my A1C numbers were above optimal range, I changed my diet starting September 2021 and I've lost 30 pounds in 6 months and only by the grace of God, literally! In three months, I dropped my A1C numbers by two points. I still need two more points to go. I don't eat sugar and rarely eat starchy foods. I don’t drink sugary drinks. I eat a lot of fruits (which I love but, I need to wean myself from eating too many) and vegetables (which I don't like as much).
MORNING:
- Every morning, I drink a mixture
of 1 teaspoon of organic honey, 1 teaspoon grated ginger root, and a squeeze of lemon in a cup of hot water.
- I eat an egg every morning with green chile or spinach and a corn tortilla around 10:30 a.m. For dessert, I eat a piece of fruit or berries.
SNACK:
- At 12:30 p.m., I’ll eat a piece of fruit or celery with almond butter.

DRINK ALL DAY: WATER WITH LEMON

LUNCH/BRUNCH:
- At 2:30 p.m., I'll have a smoothie with raw greens powder, protein mix, collagen/peptides powder, and a half of a banana. I used to add Chia seeds but, they were drying me out too much.
DINNER:
- At around 5:30 p.m. I'll have my dinner which consists of beef, pork, fish, legumes, and/or vegetables. For dessert, I eat a piece of fruit or berries.

DINNER PREP: I mainly cook with EVOO and a lot of garlic and onions.

I do love salads, mainly in the summer.

When I make any kind of a pasta dish, which is rare, I use the brand Banza which are chickpeas which contain resistant starch that helps with digestion

NOTE: some starchy vegetables — especially beans, chickpeas and lentils — are good sources of protein.

CHEATS:
- The weakness I allow myself is popcorn, so I'll eat a bag of Skinny Pop popcorn. I do love Perrier water with lime. I dream of chocolate, cakes and pies, ice cream, etc.! Hahaha!
- Lunch or dinner with friends every two weeks or so, I eat what I want.

I am exactly the same. Addictions. I used to be an alcoholic- serious eating disorders. SUGAR/CARBS. But I've succeeded using the same tools as you! I'm glad you made these videos. Thank you for your honesty. I'm greatful to be alive and fit.

Greetings Beth! I loved this video, it was so helpful. I'm a habitual eater too; I like to have a healthy routine and then just stick with it. I have found that I can eat berries without being triggered, but fruit in general really triggers my hunger. I'm going to try your day of eating and see if it works for me! (No raisins though) I will keep you posted! Love and blessings ♥️🙏 oh, by the way, your refrigerator is so perfectly clean and organized, you have inspired me!!
