Hi Gina, I’m another New Orleans native. You are an excellent cook. One tip - Never, ever wash oysters. Allow the liquid to drain off the oysters & check for shells. The liquid is the flavor that adds to the oyster & used in other oyster recipes here in Louisiana. Enjoy!

Yes! Eat a raw oyster with the juice still on it! No rinsing! Add just a tad of horseradish, squeeze a little fresh lemon and make sure to loosen it from the shell with a fork. Just set the shell on your bottom lip so it you don’t spill, and tilt your head back or if you’re like me, I put them on a saltine because the texture and a little bit of salt makes it better! You can’t knock it til you try it! I love hot sauce but it doesn’t work the same on a raw oyster to me. As far as the aioli, you could try an “island” or Caribbean seasoning with lime and mayo to dip the fried ones. You won’t be sorry!! Just so you know, I love listening to you talk. You’re so cheery and bright and you describe things so detailed, I feel like I’m there. Thank you for being you! <3

Morning Gina, Oysters on the half shell are wonderful. They have a Briney taste to me. They are great with Tabasco and lemon juice, or horseradish sauce and lemon.
I also love Oyster Rockefeller, scalloped oysters as well. Fried Oysters are my favorite.
A PoBoy is made on a good soft bun.
