To elevate the taste of leeks and onions you can also add a tiny bit of butter alongside the olive oil (thanks Akis).

Leeks are notorious for hiding lots of dirt between the leaves, so it's a good idea to wash them carefully after you cut them to avoid grit in your pitta. :)

Don't watch with closed captions on. Had the damn thing on from another video and the auto generated captions somehow heard Feta cheese as Foetuses 🤢
