Becky, I am 78 and a widower I have been watching and using your recipes for about a year now.Your recipes are easy for someone like me and almost foolproof.Good meals that are what I was raised on. I was watching "The Appalachian Channel" recently and they were filming at "Picker's Paradise" and I saw you on there as a customer.It seems like your area is one big family.I am very sorry to hear about the loss of your husband. If you fry up your sauerkraut in a little bacon grease until it's caramelized, it'll take out the moisture and add some incredible flavor.
If you mix the dressing with some dijon and some horseradish, you'll be a happy camper.
You can also make a Ruby, which is made with roast beef instead of corned beef.
These are some hardy sandwiches and the thicker the bread is, the better it's gonna hold up, so toasting the bread on both sides and frying up your kraut in that bacon grease helps to not sog the bread.
Serving this up with some pickles makes a complete meal with these sandwiches for me, usually kosher dill or bread and butter are my favorites.
Some folks say there's pickles already in the dressing, but them little bits don't do it for me.

The grill cook at the hospital where I worked made an awesome Reuben sandwich. His secret was to make a mixture of the sauerkraut, Thousand Island dressing, and shredded Swiss cheese, and melt that on the flat top at the same time the bread was grilling, and the corned beef was browning. then once the mixture was placed on the bread with the meat, put another slice of Swiss Cheese, and put the brown mustard on the top slice. Then he’d put it under the cloche for a minute or so, until the cheese was melted. So delicious!

I really enjoy a good made Ruben sandwich, I like mine with thousand island dressing, swiss cheese, and stokely sweet and sour kraut, and most definitely grilled on the panini press. Great Irish sandwich made on rye bread.👍☘️😎 prayers were lovely
