Ingredients:
- 1.5 pounds of skinless, boneless, chicken thighs
- 1/2 onion
- 4 cloves garlic
- 1 tsp fresh grated ginger
- 2 medium yellow potato
- 2 medium carrot
- 3 tbsp oil
- 3 cups water
- 3 tsp bullion
- 1/3 cup natural creamy peanut butter
- 3 tbsp tomato paste (1/2 can)
- 1 tsp cayenne pepper and red pepper flakes (optional)
- 1 bay leaf
- 2 tsp fish sauce (optional)
- Salt and pepper to taste

Omg!! I will totally make this version! I have been making a vegetarian version of this for awhile. The only difference is using kale instead of meat, potatoes and carrots and then I sometimes top mine with peanuts and cilantro. Its pretty good but I bet this one has alot more flavor!

We have a slightly similar version of that here in the Philippines and it's called "Kaldereta". It has peanut butter as well. Usually made out of pork, beef or goat meat and with either green or red bell peppers.
