Tanghulu (otherwise known as candied strawberries) is a popular street food in Asia. It is very easy to make and requires only 3 ingredients - sugar, water and fruit!

Tanghulu originated in China, but you can find these tasty treats in almost any major city in Asia. I often see several tanghulu carts pop up on Hongdae street (a lively hangout spot in Seoul) when the weather is good.

Tried it, failed three times but the third time i actually got it! It tastes amazing and i tried it with kiwi, It was a sticky mess left over but it tasted really good on the kiwi!

That's why it's important to understand how sugar works and to have a food thermometer. In that way, you can reach the desired temperature (between 148 C to 150C, hard crack stage) in a quarter of the time by first adding A LOT LESS water (usually a third of the weight of sugar used would suffice) and increasing the heat to the maximum. 22 minutes to reach the hard ball stage is just waaaay

Tip: Don't wait till the colour is slightly caramel-ish(?) You have to work fast, and if you dip your strawberries in a caramel colour, it will be think, so instead, dip it when it's a light Amber.

When you're dipping them, the sugar doesn't look like it's bubbling. Did you turn it back to low at that point or something?

I love making this
You can also turn it into Carmel by adding heavy cream or heady wipping cream, vanilla, and butter :)
