As an italian and as i was born and live in Rome some advices:
CACIO E PEPE: please NEVER NEVER use oil and butter only pecorino and pepper (and some cooking water to make creamy sauce) simple as that.
GRICIA: Well done sir!
CARBONARA: No oil only the fat from guanciale, at the end to “cook” a little bit the eggs put the pan over a boilin water.
AMATRICIANA: No oil just the fat from guanciale, when it’s done pour half glass of white dry wine and let it evaporate the rest of recipe is perfect!

Loved Stanley Tucci's thing he did. But, was always like... "He just said that's the best thing he ever tasted and yet there's only pasta, cheese and pepper in there". This video makes it a bit clearer.

i heard from 4 pastas of rome from Vincencos Plate and i am happy to see this 10 minute - 4 recipes video. the carbonara i do exactly the same way, mix the ingredients in a bowl and add the hot pasta and some starchy noodle water. sometimes i also add gorgonzola. i have never tried to cook myself with original guanciale or pecorino cheese, even though i cooked carbonara numerous times.
i know carbonara from my childhood when my mum (may she rest in peace) prepared the dish skillfully for our family, with actual cream as it was requested ^^ by my father. he adds tons of pepper to anything - did not know back then that for these dishes, that is how it is supposed to be.
i will definatley be cooking the 3 dishes i havent prepared before.

Thank you for the demonstration. Certainly learned a LOT more from this than Anthony Bourdain's Cacio e Pepe episode.

No oil and butter! You should toast peppercorns and make a paste with the pecorino and pasta water !

You don't need oil with any of these pastas.
Just the fat that comes from the guanciale.

Don't salt the water with the pasta plenty of salt in the cheese, No Oil, No Butter, the pork fat is all you need. serve immediately before the sauce thickens up to much.

Don’t use bacon. It’s smoked and
Kills the original flavors. If you can’t find pancetta better use salted pork which is pretty close.

The chef who made the Cacio e Pepe in Tucci’s show used 80-20 Pecorino and Reggiano. Using 100% Pecorino is not as flavorful and the texture is different and not as good.
