RECIPE: PRICKLY PEAR JAM!

In this video, I show you how I make Prickly Pear Jam (Jelly) fresh from organically grown prickly pears, from cleaning the freshly picked fruit right up to having a taste of the prepared jam! I like to use a 2:1 fruit to sugar ratio for all my fruit conserves/preserves.

This was one of my favourite fruits for canning/preserving - It took a bit of time but the outcome was so worth it!

A note for my American friends - In Australia, we refer Jam what you would refer to as "Jelly", a spread enjoyed on toast, scones or with crackers and cheese platters. Jelly in Australia is chilled fruit juice and gelatine served with ice cream, what you would refer to as "Jello".

RECIPE

Ingredients:
7 cups fresh prickly pear juice (I used red fruit for this recipe - its the best colour!)
3.5 cups of sugar
1 tablespoon of butter

Method:
1. Wash and peel prickly pears.
2. Mash/blend/mix prickly pears and pass through a sieve/strainer.
3. Place in a saucepan or shallow pot, add butter and bring to the boil.
4. Add sugar and Jamsetta, stirring until dissolved.
5. Bring to the boil and reduce down until mixture is thick, around 25-30 minutes, or until jam sticks together when placed on a frozen plate (Boil further if needed).
6. Transfer into sterilised jars, seal lids finger tight and boil for 10 minutes to process.
7. Place on a tea towel on kitchen bench and leave for 24 hours before consuming.
8. Refrigerate after opening but most of all ENJOY!

Thanks to your mom showing how to peel these! I desperately want to make my jam without adding tons of water the way most of the tutorials I've seen do it, but it just isn't practical without a way to peel them. I can't wait to make some this year!

Thanks alot for the recipe ❤💐🙏, I am from Egypt we have prickly pear every where in Summer, very cheap but we eat it as a fruit or a street food in the evening from carts, , I will give this recipe a go

If I may make a suggestion, scope out the seeds to use in drinks since the meat surrounding the seeds is very sweet. Then use the rest for preserves.

Wow! I love this. Great tutorial. Where are you in Australia? I live in the Southwest of the US where we grow so many beautiful prickly pear cactus. Do you have native prickly pear cactus in Australia, or are they an imported food that grows well in your climate? Thanks friend!

Jam and Jelly are the same in America too. It's just most use the word "jelly" for everything. Personally, I can't stand jelly, I prefer jam and preserves in my house.

No jam isn’t made from the fruit juice, it’s made from the fruit ! Jams and preserves are basically the same the only difference is how you mash your fruit ! Jams & jellies aren’t the same !

Not quite correct. Jam is made with the fruit, jelly is made with the juice only. In Oz and nz we use “jelly” for the fruit juice conserve and for what the Americans call Jello.
