All u gotta do is butter and sugar and stop after there are no clumps of sugar left, medium heat and dont touch until 1 hour or else u may get a burn (i know because it happend to me)

Cover and cool? NO. Do NOT cover. Preferably move to a shallow metal pan to cool quickly. Covering traps steam(heat) and takes longer to cool.
