As a previous butcher I’ve seen plenty T-Bones go out as Porthouse steaks and viceversa. Don’t order a specific cut order the best of the meat they have. I’ve picked up flank steaks, flat irons and skirt steaks because the premium cuts were either too expensive for the qualities they lack or the cuts I ordered were under priced for the qualities they delivered.
