Double Chocolate Muffins • My Take On Viral Olympics Muffins

These muffins are all over my feed, and I couldn’t resist trying them out after watching @henrikchristians1’s videos and here’s my full-proof recipe that’s every chocolate lover’s dream 🤤🤤
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup castor sugar
- 3 tbsps dark cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup neutral vegetable oil
- 2 tbsps yogurt
- 1/2 teaspoon vanilla
- 1 teaspoon coffee
- 2 teaspoons vinegar
- 1/2 cup hot water
- 1/2 cup chocolate chunks or chips
Chocolate Ganache:
- 1/4 cup chocolate
- 2 tablespoons unsalted butter
- 4 tablespoons cream
Procedure:
1. Start by preheating your oven to 170°C (338°F) and line your muffin tin with paper liners.
2. In a mixing bowl, combine the dry ingredients: all-purpose flour, dark cocoa powder, baking soda, and salt. Mix them well and set the dry mixture aside.
3. In a bowl, whisk together the castor sugar and neutral vegetable oil until well combined. Add the coffee powder.
4. Slowly pour in the hot water into the sugar-oil-coffee mixture and mix until everything is well combined. Then, add the yogurt mix well. Followed by vanilla extract.
5. Gently sift and fold the dry ingredients into the wet mixture in three parts. Be careful not to overmix; just fold until the dry ingredients are incorporated.
6. Mix the chocolate chips with a bit of the dry mixture to coat them before folding them into the batter. This step helps prevent the chocolate from sinking to the bottom of the muffins during baking.
7. Right before baking, add the vinegar to the batter and gently fold it in. This will help the muffins rise nicely.
8. Fill the lined muffin tins with the batter, and top each muffin with a few more chocolate chunks.
9. Bake the muffins in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.
10. Once baked, allow the muffins to cool completely. Then, using a small spoon or knife, poke a hole in the center of each muffin and fill it with the prepared dark chocolate ganache.
