Double Chocolate Muffins

It’s Thursday morning once again and this week I’m making Double Chocolate Muffins. These are unreal, delicious, moist, very quick to do and like I say in the video, your kids are gonna absolutely mill them 👌🏻😋
Recipe
100g | ½ cup of granulated sugar
100g | ½ cup of soft packed brown sugar
3 small eggs or 2 medium
100ml | ⅓ cup + 1tbsp of oil
310ml | 1¼ cup of buttermilk
210g | 1¾ cup of plain flour
65g | ⅔ cup of unsweetened cocoa powder
2 tsp of baking powder
½ tsp baking soda
½ tsp of salt
200g | 1⅓ cups of bittersweet chocolate chips
50g | ⅓ cup of chocolate chips to go on top
Buttermilk substitute - Just add about 1.5 tbsps of vinegar or lemon juice to some full milk. Stir and let it stand for about 5-10 minutes
You can also use an ice-cream scoop if you have one. I know for a fact that everyone has a tablespoon so I used that
A few tips - If you find that the chocolate chips sink try using smaller chips. You can also toss them in some cocoa powder before adding them. Another option would be to thicken the batter by using 250g of flour instead of 210g
Bake at 210 C for 5 minutes then lower the heat to 190 C and bake for a further 15 minutes 👌🏻
Fan Oven - 190 C for 5 min. 170 C for 15 min.
