2 tablespoons olive oil or avocado oil
1/4 cup dijon mustard (can sub yellow mustard)
1/4 cup honey
3 cloves garlic minced
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 1/2 pounds boneless skinless chicken thighs (Note 1 for bone-in skin-on chicken thighs)
