Low Carb Blueberry Cheesecake Bars!

Ingredients:
2- 8oz packages cream cheese, softened
3 eggs
1/3 cup golden monkfruit sweetener
1 tsp vanilla extract
1/4 tsp cream of tartar
1/8 tsp baking soda
1 cup fresh blueberries
Directions:
1. Spray an 8x8 or 9x9 baking dish with cooking spray and preheat the oven to 325 degrees.
2. In a large bowl, mix together all the ingredients except the blueberries with an electric mixer until combined.
3. Spread evenly into the prepared pan.
4. Sprinkle the blueberries on top.
5. Bake 40-45 minutes.
6. Remove from the oven, cover loosely with foil, and place back in the refrigerator at least 4 hours.
7. Cut into 12 bars and enjoy! (Each bar is 3 net carbs!)
