Potato Latkes

Ingredients

2 large baking potatoes
1 extra-large egg, whisked
3 tablespoons all-purpose flour
1 1/4 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons clarified butter

Directions

Peel the potatoes and grate them on a box grater. Wrap the grated potatoes in a kitchen towel and squeeze out as much liquid as possible. Combine the potatoes in a bowl with the egg, flour, salt and pepper. Mix well.

Melt the clarified butter in a large saute pan over medium heat. Place a tablespoon of the potato mixture into the sizzling butter and cook for 2 minutes. Turn the pancakes over and cook for another 2 minutes, or until crisp on the outside and golden brown. Serve the pancakes hot from the skillet.

Cook's Note

To make the clarified butter, slowly melt 4 tablespoons butter in a small saucepan. Set it aside until the milk solids settle. Spoon off any solids that rise, then carefully pour off the golden liquid, discarding the milky part in the bottom of the pan.

The food is one thing, beautiful, but their relationship...so precious. If I never make anything from her (I do, I'm making these right now) I enjoy watching her so much, What a delightful and gentle woman she is. I really admire her understated manner.

I prefer my latkes with onions and sour cream, but Ina is always a delight! I’m so glad she stressed the importance of squeezing out the excess moisture. You wouldn’t believe how many people skip that step, and the latkes are then inedible.

I had to make these after watching this. I did however make one change and one addition.
First I grated up and added an onion. Secondly, i served them with sour cream.
Delicious.

I love Ina. I especially love how wonderful the relationship is after so many years between her and Jeffery. Not to mention, these potatoes are wonderfully delicious 😋💕. I just saw all the comments. Why no onions. Well for starters- it’s for breakfast and with the applesauce they just don’t taste right. Second, you have to sauté the onions beforehand or they don’t cook with the potatoes. You get a crunchy kind of onion taste. And third, not everyone wants onions all the time. I like mine with and without. Geezs, picky picky ppl

My mom makes this, it's good with sour cream too. My mom's boyfriend is Polish. I might send her this video. It's a Polish dish, but some people in my choir are Jewish and they said it was also a Jewish traditional meal. My mom has a special potato grater, but I forget what it is called. We make 20 at a time, and my mom's boyfriend loves them much.

This might sound silly but I made these and they're the most potato-y thing I've ever tasted! I used ghee, which is clarified butter, and a little olive oil.
