just made the frittata half size (for one) with multiple substitutions and it *still* came out amazing. barefoot contessa has taught me how to cook so many things well.

I love the mashed potatoes with chunks in them, but I've also come to love cooking unpeeled chunks of golden potatoes in water just covering with barely any edges and tips exposed at the top. Cover and cook till past the fork tender stage, which yields a soft, pillow-like potato, which is also succulent. It is more flavorful this way from the salt in the cooking water if you cook it this far, but it almost seems juicy, or like it doesn't need gravy. It's just really good as a stand alone way of doing potatoes. Then I pour out only one quarter to one third of the broth and mash the potatoes in place with only enough strokes to break them down. Upon mashing, they suck up all of the water immediately, eventhough it seems like you have too much water to work with. This method gives a lot of flavor, creaminess, plus not chunkiness, but texture from the minimally mashed potatoes. I usually resort to this method because it's so easy, eventhough I love all potato dishes that I've ever come across.

Both mustard and egg yolks contain lecithin. You will recognize this as an ingredient in such things as candy bars. Lecithin is an emulsifier which helps two things that don't want to combine, like oil and water, to combine.
