I’m telling you, if you want to elevate your jollof, place the vegetables on a pan or use a gas burner and roast them. That brings out the smoky flavor and it’s soooo good.

My nigerian roommate would cook this a lot and my filipina-ass would drink water after every spoonful but it was so good!!! I actually felt that my spice tolerance improved because of her cooking 😂😂

Recall when I was back in Nigeria, weekends were always fun. There were always parties to attend and plenty of party jollof rice to eat. I mean jollof cooked on wood fire. There is a unique taste and aroma that goes with such jollof.
