Actually, when he sees the injured people he feels guilty and starts calming down but when soldiers points gun at him he again gets a bit angry. So Hulk was not actually defeated but calmed down by seeing his mistakes.

Hulk was already hallucinating which was why he was going nuts. The gas wasn't making him hallucinate more, it was probably some form of heavy concentrated anesthesia.

When Veronica (Hulkbuster initiative) was spraying gas it was to calm him down, however, Hulk WAS hallucinating because of "that little witch was messing with his mind" when he comes out of that wreckage of the building he came OUT of the halucination, and to THAT, thats why Stark was able to pop em one and it stuck. Technically at the end he wasnt starting to hallucinate...the hallucinations that Wanda made him see started wearing off until Hulk seen all the guys pointing guns at him that got him started again before Stark blindsided him 💯

It's pretty clear that you didn't watched the whole movie to investigate this one punch thing.

In the fight scene after Ultron gets interrupted by the Avengers stealing vibranium from Klaue, Wanda and Quicksilver worked together alongside Ultron to stop the Avengers. In this scenario, Wanda convinced each Avenger to be within a place of what they fear... causing some kind of nightmare. Now, the Avengers believing that they are in a different world, left Bruce Banner alone and vulnerable to threat on the Quinjet.

Bruce Banner was then given some sort of nightmare by Wanda, probably having him see some stuff that had happened to his life from the 2008 "The Incredible Hulk" movie. You can also really tell that Wanda was behind all of this just by looking at Hulk's eyes being red, and green by the end of before the last punch was thrown. Also, there was a short scene where Quicksilver and Wanda were looking at Bruce being alone in the Quinjet.

Furthermore, when Hulk's eyes became "green" again, hulk became conscious and confused from seeing people who are hurt and scared... from which then hulk got enraged again from seeing some guns being pointed at him... before he got sucker-punched.

Plus, that last punched was probably charged from a great distance to have knocked him out... with the help of the gas from the Hulk cage.

Also, that gas was just sleeping gas... probably.

Note: I haven't watched the movie for years now soo, I may have gotten some stuff wrong here. Sorry for the bad English, lol.
