I'll admit now, as someone that doesn't live on a farm and doesn't usually have time or money to prep whole veggies, I use a basic coleslaw mix from the shops. Has the basic ingredients which I can then add flour and water to. Then I usually top it with shrimp though and it ain't okonomiyaki to me without the okonomiyaki sauce and mayo so I try to get as close to that as I can. We had the japanese mayo here once and I was in heaven, but now it's gone scarce in my province, even in the major cities.

Could also make a pesto dip or chimichurri with those carrot tops to spoon over it.

One question about the larger, darker, pre-plated pancakes at the table: Were they some sort of Vegan or gluten-free alternative?
