Osso buco, in Italian, translates to bone with a hole. Traditionally it is made with veal shanks, but it’s common to see pork, or like this recipe, beef shanks. As the meat simmers down, it breaks down and becomes tender and the marrow in the center of the bone adds richness to the sauce

This osso buco recipe produces a tender beef shank cooked over low heat with red wine and a few other ingredients. An easy recipe that takes only 20 minutes to prepare and about 3 hours to complete.

This is my own recipe that is much simple and easy and so delicious. Why are people so seemingly defensive about what constitutes "authentic" Italian food? Do Italians never add any variation to a set list of "authentic" dishes? I want to immediately warn you that I do not pretend to be an authentic Italian recipe.

Ingredients:

•Beef shanks 800 g
•Olive oil 30 g
•Butter 40 g
•Garlic 3 cloves
•Shallots 4-5 pcs
•Leek 1 root
•Carrot 150 g
•Parsnip(chirivia) 80 g
•Turnip 100 g
•Thyme sprigs 3-4 pieces
•Bay leaf 3 pcs
•Salt and pepper to taste
•Cognac 30 g
•Red dry wine 1 bottle

1. Brown the wagyu beef shanks in oil. Set them aside.
2. ⁠Make the braising liquid sautéing celery, carrots, onions, parsnip (chirivía) and turnip.
3. ⁠Return the meat back to the pan.
4. Add bay leaf, thyme and cognac. Set it on fire.
5. ⁠Add wine. Cook for about 2 hours. Test for doneness by poking the meat with a fork. The meat should be falling apart and tender. (You can add beef broth if desired)
6. ⁠Serve shanks over creamy polenta, mashed potatoes or egg noodles topped with the sauce from the pan and fresh parsley. Enjoy!

I already shared this recipe a few months ago. I had to edit and share again, the reason is that ➡️ There was an error in video editing! This piece of beef is called Osso Buco! (Osso busco error) many people didn't pay attention to this, most people realized that this was a mistake. But unfortunately, some people (very few of them) wrote me ironic and mocking comments…. People, be kinder and the world will be a much better place ❤️

This is the beauty of Osso Buco! There is no “right” way to make it. It is so simple and so delicious! I love the addition of leaks and shallots! Must have such an incredible aroma!

I enjoy making a version of osso buco . SO, simple and yet elegant for a piece of meat usually scoffed at. It never fails to please my friends. I make it for myself with fondant potatoes or polenta.

You can also deglaze the pan with red wine after seqring the shanks to make a wine reduction. You then add this in like the wine in this video, it will be thicker and richer. If you want, you can strain that sauce when the osso buco is done and use it to baste the osso buco. After all that, strain the sauce again and add in some butter to make a very flavorful red wine redution meat sauce.

The issue i got with this is that by the time the meat will be tender the veggies will super mushy and flavorless. Kenji has a nice write up on stews, he has veggies they will favor the broth and veggies he will eat

I adore Osso Bucco ❤🤤🤤🤤 many many many others do also. When researching recipes on yt, if the cook mispronounces “Osso Bucco”, than they shouldn’t cook Osso Bucco. That shows extreme disrespect and disregard and ignorance to the dish. Please do not take it the wrong way if people are sharing wisdom with an inspiring cook. (I’ll call you chef when you become one), about pronunciation of food you’re preparing. Instead, research correct pronunciation of food prior to videotaping your cooking presentation for all future videos? You’ll gain a lot more viewers that way.
