To add, a larger cap muscle is ideal for ribeye, that outer spinalis is the finest part of the cow, so don't settle for a tiny bit of it.

I heard it’s a deep red like that when the animal was under a lot of stress when slaughtered. The meat will be tough and to stay away.

You just told me you know absolutely nothing about ribeye steak. You never mentioned the cap or the end, (large and small end), or the presence of connective tissue. And what about grade? Select, choice or prime?, 🤔🤯
