Crispy Pork Belly
Ingredients:
(For boiling)
Pork Belly
2 Bay leaves
5 cloves of garlic
1/2 tbsp whole black pepper
(For seasoning)
1 tsp salt
1 tsp ground black pepper
1 tbsp garlic powder
1 tsp paprika
1 tbsp old bay seasoning
*more salt for absorbing the moisture from the meat
Method:
1. Place pork belly in a pot. Let it boil, then simmer for 30 minutes.
2.Take pork belly out of the pot. Let it rest for about 1 hour or more.
3. Slice through the meat side.
4.Mix salt, black pepper, garlic, paprika and old bay seasoning.
5.Season the meat side. Rub and give it a little massage, rubbing seasoning into meat, helps the meat absorb the flavour.
6. Pat meat dry to remove excess moisture.
7.Wrap the meat side with foil.
8. Pour salt all over the skin, this helps pork skin become crispy and flavourful by drawing out moisture and reacting with the fat under the rind.
9.Put the air fryer for 20 minutes at 305F. After 20 minutes, increase the temperature to 400F. Cook for another 5 minutes.
10.Then, take the meat pork belly out, remove the hardened salt, pat some vinegar on the skin, then put it back in the air fryer
11.Cook for another 10 minutes at 400F
12.Drizzle oil, making sure to not miss any parts of the skin
13.Slice the pork belly, chop and plate.
14.Serve with plain or fried rice. Enjoy!
