Shepherd’s Pie
Mashed Potatoes Topping
-Ingredients-
2 lbs. russet potatoes
1 tablespoon salt
1 stick Kerrygold garlic and herb butter
1/2 cup sour cream
1 tablespoon Kinder’s buttery steakhouse
1 1/2 to 2 cups heavy cream or milk
The Pie
3 lbs. ground beef
1 medium onion chopped
1 tablespoon Kinder’s caramelize onion butter
1 tablespoons Kinder’s brown butter roasted garlic
1 teaspoon red pepper flakes
2 cloves garlic chopped
1 tablespoons tomato paste
1 1/2 frozen peas and carrots
1 cup frozen corn
1/4 cup red wine ( I use cooking wine)
3 tablespoon Worcestershire sauce
1 tablespoon rosemary
1 tablespoon thyme
2 tablespoons flour
1 cup beef broth
Pepper to taste
1 cup coby Jack cheese
1 cup cheddar
1 tablespoon parsley
-Instructions-
To prepare Shepherd’s pie, begin by creating the mashed potato topping. Peel and dice the potatoes, then rinse them in a bowl.
Place the potatoes in a pot of water over medium heat and add salt. Cook until tender for about 12 minutes, then drain the water. Return the potatoes to the pot and mix in Kerrygold garlic and herb butter, sour cream, Kinder’s buttery steakhouse, and heavy cream. Mash the potatoes until smooth using a potato masher or hand mixer. Cover the potatoes and set aside. In a cast iron pan, cook the ground beef until brown. Drain the grease and return the beef to the pan. Add onions and cook until translucent. Mix in Kender’s caramelized onion butter, brown butter roasted garlic, red pepper flakes, and garlic. Cook until the garlic is fragrant, then add tomato paste. Cook for another 2 minutes, then add frozen peas, carrots, corn, red wine, Worcestershire sauce, thyme, rosemary, flour, beef broth, and pepper. Stir well, cover, and simmer on medium-low for 25 minutes. Remove the lid and top with cheese followed by the mashed potatoes. Sprinkle with parsley then place the baking dish on a rimmed baking sheet to prevent spills. Bake uncovered in a 375 degrees oven for 25-30 minutes. Allow to cool for 15 minutes before serving.
