INGREDIENTS
8oz ( 227 g) Pecans (or nuts of choice)
egg white from 1 large egg
3 Tbsp (40 g) granulated sugar
3 Tbsp (40 g) light brown sugar
1/2 tsp (2.5 g) fine salt
1 tsp (2.5 g) ground cinnamon
2 tsp vanilla extract

INSTRUCTIONS
- In a large bowl add white from a large egg and whisk until foamy
- Now add in sugar, light brown sugar, salt, ground cinnamon, vanilla extract and whisk until foamy and pale in color
- Next add pecans, coat and combine well
- On a lined, greased large baking sheet add coated pecans in a single layer
- Bake in a preheated oven at 300 degrees F/ 148 degrees C for 15 minutes
- Remove pecans from oven, toss and arrange in a single layer
- Place pecans back in to the oven and continue to bake for an additional 10 to 15 minutes
- Remove pecans from oven, allow to set and cool for at least one hour
- With a wooden spoon, remove, break apart candied pecans from pan and serve

I made these one year and they were a hit! So easy too. The recipe I found said to add a small pinch of cayenne pepper in the mixture, it had a very subtle kick to the pecans! I'm inspired to make more!

I make these with a tiny touch of ground clove and ground cayenne pepper. Gives them a kick!

Yum!! We just got bulk pecans and walnuts from Costco, and this is perfect to make some. I absolutely love these on salads, especially for special dinners such as Thanksgiving. Thanks Angelica, you’re a kitchen rockstar! Love! 🌸

Hi, thank you for showing this recipe for the oven with temperatures and timing. I use to make this recipe years ago and it was for a microwave, but my family has decided we don't want a microwave in our home anymore. This oven recipe is much appreciated. Thanks! 😋😄

Oh, I love this!!!

Just a tip if I may? If you like to kick these up a notch, adding a bit of cayenne to the mix is awesome! (I do brown sugar, cinnamon, salt and cayenne popcorn, it's so good!)

My Nana used to make candied pecans. She'd place one on a chunk of duck liver, wrap it in half a strip of bacon, bake until crisp, and serve on Christmas Eve. She called them "the Devil's bane" -- "He doesn't get any treats today!" Miss my Nana. I think the recipe must have been from her Creole relatives.
