In the process of canning some sausage today. I will make patties, brown them partially cooked and can with no liquid. This is the method I learned from my mother. I also can some like I do ground beef. No liquid.. This I learned 70 years ago. It has never failed me.

I grew ⬆️ on canned sausage too. Our family placed the sausage in tin cans, sealed them properly & then boiled the cans in a huge, rectangular copper pot. Could you pack in sausage, unballed, perhaps getting more product? That’s how ours was done; we’re Virginia natives.

This is the way that I can my sausage, I learned from my Aunt who lives in Mars Hill NC. I actually had some this morning, love it but it is very different than sausage any other way. I live in Bluff City, TN.
