Crostini Appetizer w/ Burrata Cheese, Pesto & Oven Roasted Tomatoes

This appetizer is always popular at gatherings. It's quick and easy to put together and tastes so good! Oven roasting the tomatoes is the only cooking required for this colorful and delicious party dish or light lunch.
Crostini w/Burrata Cheese, Pesto & Oven Roasted Tomatoes
1 baguette, sliced
Burrata cheese, drained
Pesto (store bought or homemade)
Grape or Cherry tomatoes, halved
olive oil
salt/pepper
Fresh basil leaves (optional)
Preheat oven to 400 degrees. Line a shallow baking pan with parchment for easy cleanup.
Slice baguette and brush one side with olive oil. Lay slices, oil side up, single layer on parchment lined baking sheet. Set aside.
Wash and dry tomatoes. Slice in half and place on second baking tray. Drizzle about 2 tablespoons olive oil over tomatoes. Season with fresh ground pepper and salt. With your hands, evenly coat the tomatoes with oil and seasonings. Spread out in a single layer.
Place prepared tomatoes and baguette slices into preheated oven and toast bread for 15-20 minutes, until crispy and lightly toasted. Continue baking tomatoes until they are soft and cooked to your liking, 20-30 minutes or more. Let cool slightly.
Drain burrata cheese and dry with a paper towel. Cut portions from ball of cheese and lay atop each baguette slice. Spoon some pesto over the cheese, then top with roasted tomatoes. Garnish with fresh basil, if desired. Enjoy!
