Do you ever age your mead? I know you've talked about adding special mead wood chips to mimic the effects of aging, but it seems, in general, your mead is ready pretty quick without aging.

Since he doesn't tell you sanitization is key to safe and effective brewing. Yeast nutrient contains carcinogens unless the yeast use all of it which is hard to do, it needs certain conditions.

Look into campden tablets and Starsan. I've made over 50 gallons of wine and cider this year and have had no problems. Yes I share it with family and friends.
