How to make your lemon cakes super moist!

*Ingredients*
For the cake:
170g softened margarine/butter
170g caster sugar
3 large eggs, room temperature
Zest of 1 lemon
170g self raising flour
30 fresh raspberries

For the syrup:
50g icing sugar
50ml lemon juice

For the glaze/topping:
200g icing sugar
1tbsp lemon syrup
2tbsp milk
50g seedless raspberry jam

1) Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan).

2) Line an 8x8" baking tin with baking paper.

3) Whisk together the butter and caster sugar in a large bowl until light and fluffy.

4) Add the eggs and lemon zest and whisk them in until fully combined.

5) Fold in the flour until just combined.

6) Scoop the mix into your baking tin and smooth it out.

7) Scatter the raspberries over the top.

8) Bake for 25-30 minutes until a toothpick comes out with only a few crumbs.

9) For the syrup, mix together the icing sugar and lemon juice until smooth.

10) Poke holes in the cake with a toothpick.

11) Pour the syrup over the cake, letting it seep into the holes.

12) Remove the cake from the cake tin and remove the baking paper.

13) Wrap the cake in cling film whilst still hot and set it aside to cool.

14) For the glaze, stir together the icing sugar, lemon syrup and milk until thick and smooth.

15) Pour the glaze over the cake and smooth it out quickly.

16) Melt the raspberry jam in the microwave until melted and hot.

17) Dollop the jam over the top of the cake and swirl it through the glaze with a toothpick.

18) Let it set before serving.

19) Enjoy!

I would love this cake. Also, you're cute. I have an increased overjet due to a small mandible and when I look at other people with the same problem and find them cute, it makes me think I am cute too.
