Hello! i'm pretty sure the y level only affects hostile mobs, not passive, and the reason you were still getting sheeps cows and pigs so often at the start was because there is only one place for them to spawn

The best kind of tree for these challenges for wood has to be the spruce tree, make a giant one and not only do you get podzol, but also 41 wood as a minimum per tree, and they always drop more than 4 saplings per giant tree.

You could have used a shovel on rooted dirt to get a dirt block, then turn that into a grass block
