It is immaterial whether a shark mistook a human/kayak for a seal or whether it was simply attacking for a meal. They also may test-bite and conclude this ‘animal’ is not a suitable food source or they’re curious/bored/annoyed and kill for territorial dominance. Either way THE HUMAN WILL DIE IN MANY INSTANCES.
