I think your video was more helpful because you wrote down what you wanted to cover. So many of the contributors for BBQing just talk in random, distracted circles. They're a waste of time. Yours was very helpful. Great work!

Getting a classic 2 next week, any tips on breaking in the grill? My wife wants brisket, but said I need a couple cooks of maybe burgers to figure it out first.

I think the KJ max temp is 750F and you went above 850F. That is probably what cracked your plate.

Just got my new Classic II assembled yesterday. Tried to do the initial burn, but couldn’t get the temp above 450°. Charcoal basket was half full. I’m hoping famine my vents were set wrong. Everything else seems to be fine with it.

Agree with the burping of the Kamado. I have a green egg and burned all the hair from my hands with burping alone, imagine what happens when you open it fully.

Especially when you burp it and smoke comes out the opening, wait with opening it further.

Another tip I could add is to lower temp is by opening the grill for a couple seconds. It let's all the hot air escape and adds cold air. Don't do it too long

I just received my new Classic II today. Thank you for mentioning that it doesn't need to be "broken in". I've been wondering about that and haven't heard it mentioned in the tons of videos that I've watched so far.
