I'm not gonna say it looks bad, and I would probably eat this up, but why do you wait until the sauce is liquid to put in the celery, carrots, etc? You want to make a soffrito with those probably beforehand, so they can marry and make the base of a sauce like a Bolognese.

This looks great. I am sure it's wonderful.
