How to make Shrimp Scampi without wine

Shrimp scampi | scampi | shrimp recipe
Shrimp scampi is a popular Italian-American dish that typically features sautéed shrimp in a garlic and butter sauce. "Scampi" actually refers to a type of small lobster that is commonly found in the Mediterranean, but in the United States, the term is often used to describe a preparation of shrimp in this style.
My shrimp scampi sauce is made with a simple wine substitute that still adds a lot of flavor. Make my easy shrimp scampi on a busy weeknight for a delicious protein packed meal!

Shrimp Scampi Recipe (2 servings)
INGREDIENTS:
1 lb/450g whole shrimp OR 0.5 lb/225g peeled shrimp
1 tbsp minced garlic
1 tsp red chilli flakes
3 tbsp butter
1 tbsp cooking oil
parsley for garnish
Salt as needed
---wine replacement---
1/2 cup water
1 tbsp apple cider vinegar (or lemon juice)
1/2 tsp sugar

METHOD:
1. If using whole shrimp, peel, devein and clean them. Save the shrimp shells and heads in an airtight container to make stock. You can store it in the freezer too
2. Pat the shrimp dry and mix in 1/2 tsp salt
3. Mince garlic, parsley and prepare the wine replacement
4. On medium flame, heat 1 tbsp oil and 1 tbsp butter. Add the shrimp in a single layer and fry them until cooked through. It should take between 1 min (medium) - 4 mins (jumbo) per side depending on the size of the shrimp
5. Once the shrimp are cooked through, set them aside for later
6. To the same pan add the minced garlic, chilli flakes and sauté for 30 seconds
7. Add the wine replacement and simmer until it's reduced by half
8. Add 2 tbsp of cold butter and mix until it forms a smooth emulsion. If using unsalted butter, add salt as needed
9. Add back the fried shrimp and mix until the shrimp is warmed. Don't cook for too long or the sauce will separate
10. Garnish with parsley and serve with a side salad and some crusty bread!

Watercress Tomato Salad: Handful of watercress leaves and cherry tomatoes, 1 tbsp extra virgin olive oil, 1 tsp lemon juice. Salt is not needed but you can add as per your preference

SUBSTITUTES:
• Can I just use wine instead?
Yes, use 1/2 cup of dry white wine (Sauvignon blanc or Chardonnay)

• Can prawns be used?
Yes

• No parsley?
Coriander/cilantro can also be used

• No red chilli flakes?
Skip it or add some crushed pepper for heat

TIPS:
• Shrimp can get overcooked very fast so be careful and cook until the edges turn opaque
• If using salted butter and seawater shrimp, you may not need to add salt to the shrimp
• If the sauce gets too dry, add some water and swirl the pan until the sauce thickens again

Definitely going to try this. I've been following your channel since some time now and all of the recipes are very simple and quick to make. My husband is a fan too. We would however love to see more variants of chicken and shrimp recipes, in addition to the butter garlic variant.

I might suggest skipping the water altogether as you’re going to reduce. sugar has no business in this dish. vinegar to offset wine and not optional add 2tbls lemon juice. Easier to add water if needed rather than wait to boil it off. 😊
