Expedia is a booking platform which gives you flight, hotel, packages etc. Whereas kayak and skyscanner are just search engines. I am not sure if a general comparison makes sense. Expedia’s goals will be very different from kayak.

I spent 4 of my years working one of Europes large holiday as a designer. A lot of the choices you talk about is most likely not a design choice, as these projects will work there way from various departments that frankly will have more input into the design process than the design team. It would be more lead by a marketing, product and seams team who filter there comments/requests to demands to make these sites what they are.
