Bagels were originally made with holes so that they could be peddled/displayed more easily, and it also helps for more even baking.

You could add a little more gluten to make them chewier, also roll the dough out in a longer rope and then pinch the ends together.

I've been making bagels this way with greek yogurt for a long time and using Victoria's keto flour, if anybody needs a wheat free version. I'm going to try this version too, it looks good!

Boiling in the Baking Soda/Water will help set the bagel and keep the hole in the middle. I think this is a brilliant recipe. Looking forward to seeing your variations.

Roll the dough into a long rope and then make a similar to a pretzel but not quite. I worked at a bakery and we made bagels (several dozen at a time) every week and they were sweated in a finishing oven but that's for wheat, yeast and highcarb no need here! Great keep up the great videos!

You can purchase a bagel pan for baking. it's great I have one. Also wet your hands slightly before handling the dough it will be less sticky. Once you create the bagel you place your first 2 fingers on each hand in the center hole and spin it around a few times to shape. Love this video. Is there a keto friendly Cinnamon Raisin?
