How to Make Gingerbread – The Victorian Way

Ever wondered how to make traditional gingerbread? Join Mrs Crocombe, the Victorian cook, as she makes some edible decorations to hang on the Christmas tree at Audley End House.

INGREDIENTS
60g Brown Sugar
225g Flour
¼ of a Beaten Egg
225g Butter
170g Treacle (or Molasses)
2 tsp Cloves
2 tsp Allspice
2 tsp Pounded Mace
2 tsp Ginger
1 tsp Coriander seeds
1 tsp Caraway Seeds

METHOD
In a large bowl, add the treacle, egg, sugar, ginger, allspice, mace, cloves, coriander and caraway seeds. Mix it well together and then add the melted butter. Stir in the flour and mix until you form a soft dough. You can either make the dough into small cookies or biscuits by patting a the dough into a discs on a baking tray. You could also use a mould, or cutters to make all sorts of festive and fun shapes. Cook in a moderate oven (around 180 Celsius, Gas Mark 4 or 350 Farenheit) until golden brown.

The fact my mother threw away the traditional gingerbread molds she got in Germany in the 50s because they were cheap to her when she bought them and had no idea how to use them still sticks in my craw. They were lovely.

Very interesting to see a "victorian" cook talk about "old fashioned" recipes! I love how people throughout the ages have looked back on "the old times". Time is a weird thing! BTW, have you ever considered a " - The Medieval Way" cooking series?? That would be very fascinating, I imagine they ate quite differently from the victorians (and us)...

for a history class, I showed one of your videos to my 5th grade class, now my students ask for a video of Mrs Crocombe at the end of every class, they enjoy it to watch them together as a group then at home :D ... thank you for engaging my students on your wonderful videos ♥♥♥

Love all your Victorian Kitchen recipe videos! Would it be possible to make Victorian Videos concerning how domestic did their day to day jobs, such as how to clean different items and rooms, etc and the different kinds of soaps and cleansers (whether it was homemade or bought) that they used to do their chores?

Great shows. Please keep them coming. The actress is awesome. Could you do a show on hair? How they washed it and what they used. My hair is long and I would love to know how they kept their hair looking so neat.

I made this recipe for Christmas and it turned out really well. I substituted regular un-sulphered molasses instead of treacle since I couldn't find any locally. Also I doubled the recipe and converted it to cups and ounces. The flavor certainly showcased the spices and was only lightly sweet which went over well with both my family and my girlfriend's coworkers.
