The really good places make it with super sharp aged provolone. It is very dry and crumbly. When I make it at home I use picante boarshead provolone and add Locatelli Romano cheese. It gives you the best of both worlds and recreates the super sharp flavor of aged provolone because it very hard to find that type of provolone outside of Philly/NJ/NY. Grew up in NE Philly. I I moved to Maryland as an adult and I asked a cheese monger if the had Locatelli and they said are you from Philly or south jersey? Haha. I guess I gave myself away with that one. Thank your for doing your research. Great video.

Having the right bread is a crucial part of this sandwich. Too soft or too hard, and it just ruins the whole thing.
