We smoke our tri-tips and prefer about 1/4inch fat cap. We’ve found it helps keep the meat a little more moist and tender than the ones who have been completely cleaned of fat.

His knowledge of cuts makes me want to be an apprentice. It’s fascinating. BTW, the beef jerky in the channel store is great, super lean, no chewy gristle. 10x better than store bought.

Tri tip use to be the cheapest meat and the best for BBQing . A little more fat is best left on there when Qing it up.

I know lots of people love tritip but it’s not my fav. Weird chewy texture and dry as a bone. I don’t care how good your marinade is. When these were $2 a pound it made sense, but for the price they’re charging these days you can get a picana, which is a genuinely nice cut of meat.
