i dont get why theres a step jab and a stay in place jab and when you do double jab do you step twice?

Leaving the glove or hand out is lenox version of the dubble jab.

As a ex amerature fighter and coach of 15 years. I always teach to bring it all the way back. Because if opponent comes over the top of the first one. Your hand will be there to block it.
