RECIPES FROM THIS VIDEO:
FAKE MANTI PASTA:

-150g vegan chicken
-1 Tbsp tomato paste
-1/2 TBSP harissa paste
-1 Tsp each cumin, paprika
-1/2 Tsp chili
-salt to taste
Stir fry for a few minutes.
-80g short pasta
Cook al dente.
Add to the pan with some pasta water.
Let it cook 3-4 more mins.
Yogurt sauce:
-75g vegan yogurt (I used soy yogurt)
- 1/2 TSP garlic powder
-salt to taste
-1/2 Tbsp lemon juice
-a handful chopped mint
Mix.
Serve the pasta with the sauce.
CRUNCHWRAP:
—————————————
-1 wrap
-hummus
-leftover vegan chicken
-kimchi
-vegan feta
Build your wrap and grill for a few mins on each side
FAVORITE RICE BOWL:

Rice:
-2 espresso cups rice
-3 espresso cups water
-salt to taste
Bring to a boil.
Reduce the heat and let it simmer for 20mins.
Teriyaki broccoli:
-1/4 head of broccoli, cut in florets
Sauté in oil for a few minutes.
-1 Tbsp teriyaki sauce
Toss the broccoli with it and set aside.
Ground tofu:
-1/2 block (100g) firm tofu
Shred or crumble on a baking tray.
Toss with some oil and salt.
Bake at 200C/400F for 20mins.
-a thumbsize piece of ginger
-1 cloves garlic
Fry in some oil.
-1 Tbsp teriyaki sauce
-1 Tbsp soy sauce
-1/2 Tbsp agave or maple syrup or sugar
-1 Tsp vinegar
-a splash of water
-1/2 TSP 5 spice
Let it bubble, then stir in the baked tofu and let it cook for 5-10mins.
Serve in rice with the broccoli and teriyaki sauce.
Gochujang sauce:
-1 TBSP gochujang
-1 TBSP ketchup
-1 TSP soy sauce
-1 TSP agave syrup
-1 TSP sesame oil
-some fresh minced ginger
