TUNA CASSEROLE WITH CHEESE AND COLORED RICE

INGREDIENTS
Rice ingredients:
1 ½ cups basmati rice washed and soaked for 20 minutes
2 cups water
Salt as needed
Tbsp. vegetable oil
Whole spices (5 cardamoms, 1 bay leaves,1 cinnamon stick,5 cloves)
Pinch of Saffron
Tsp. turmeric powder
Tbsp rosewater
Ingredients for the tuna casserole:
¼ stick of butter
One diced onion
2 minced cloves of garlic
One chopped chili
1 cup of peeled and chopped tomatoes
Tbsp. tomato paste
2 cups water
2 cans tuna drained
1 cup Kraft cheddar cheese block, cubed
1/2 cup Kraft cheddar cheese block, shredded

Spices:
½ tsp of each (coriander powder, cumin, turmeric)
Tsp fish spices
Salt and pepper to taste

DIRECTIONS
In a pot melt the butter and sauté the onion, garlic and chili
Add tomato and paste with the spices and give it a good mix.
Add water and let it cook for 20 minutes on medium heat
Add the tuna and cheese and let it cook for another 5 minutes.
To make the rice
Boil the rice in with water, whole spices and some salt and a tbsp. of vegetable oil till it’s andante
Drain the rice and return to the pot.
Mix the saffron with half the rose water and the orange color with the other half
Add the soaked saffron and turmeric in different spots on the rice
Cover and let it steam for 15-20 minutes
Serve the rice with the tuna on to in the middle and decorate with crispy fried onions and fresh cilantro.
