Tuna Casserole with Brunswick Tuna Chunks in Oil

Yield - 8 to 12 Servings

Ingredients:
Pasta - 2 (300g)
Butter - 4 oz
Onion - 2 cups (finely chopped)
Pimento - 1 cup (finely chopped)
Sweet Pepper - 2 cups (finely chopped)
Heavy Cream - 1 liter
Paprika - 1/2 tbsp
Salt and pepper as needed
Brunswick Tuna Chunks in Oil - 8 tins (142g)
Sliced Mushrooms - 368 g
Whole Kernel Corn - 2 tins (410g)
New Zealand Cheddar - 2 cups + 2 cups (grated)

Method:
1. Fill medium stock pot with water.
2. Season with salt, cover & bring to a boil over high heat.
3. Once boiling, reduce heat to medium and add pasta.
4. Allow to cook until al dente (about 10 minutes).
5. Strain and set aside.
6. Preheat your oven to 350F.
7. Heat a large pot over medium heat.
8. Once heated, add butter and allow to melt.
9. Once melted, add onion & pimento & allow to cook for 3 minutes.
10. Add sweet pepper and allow to cook for 2 minutes.
11. Whisk in heavy cream, cover and bring to a simmer.
12. Add paprika, salt & black pepper to taste before adding tuna, mushrooms, cream of mushroom soup & corn.
13. Lastly, mix in 2 cups of cheese.
14. Add your pasta to your tuna mixture.
15. Transfer your pasta mixture to a greased baking dish.
16. Top with cheese.
17. Place in the middle of your oven and bake for 30 to 35 minutes.
18. Allow to cool for 20 to 30 minutes before enjoying.

My mother was an original Floridain/exceptional cook, her mother a native of Georgia/her father's family the Corolinas!!!! All of the matriachs/some patriachs, were excellent Those family recipes were past down to myself/siblings/cousins, on down to our adult children. Yes, we all add many dry seasonings to our cooking, according to the dish, nonetheless, every cook in our family, both sides will not cook a dish/without our produced veggies!!! Our must adds, are garlic, onions, every colored pepper, celery, just a half pinch of ginger, as a base to what ever that dish may be!! All of the above mentioned seasonings I spoke on were gifts past down from our African Your caserol looks

Well.. i dont like tuna casserole but this looks good.
I jusy come from Grenada... although dem is spice island... trinis cook much beater!😊

No corn, no bell pepper please. I like how you do a sauce first instead of pitchin all dem cold ingredients into a pan and tossin it into the oven.
