Problem as a person with 25 years professional pizza exp having gaps in between the walls for the flames to heat are going to lose efficiency I can personally with an ooni bust out about 35 pizzas an hour because it doesn't have the gap also the flame appears though I haven't seen it on to be around at least 65% of the pizza meaning it's heating mostly evenly which sounds good but in actuality you're not going to be able to turn the pizza to even out less cooked spots
