I kinda like the idea of a whole sub species of mobs that are all connected by the fact they’re prehistoric and live underwater and can now be revived

Mob idea: The Snitch. They don't do any damage, but search for you and when they detect you scream which attracts mobs within 250 blocks to your location. They drop 1-2 Snitch Eyes which can be crafted with iron bars to make a handheld radar which shows nearby mobs in relation to you, or with iron blocks to make the radar block, which is the same except as a placeable block. I imagine them looking like four legged Furbies with big green eyes, and maybe a rare variant with blue eyes.

Definitely voting for the tree stalker. The branches could be used for an overgrown themed build. And overall it seems like a really cool mob for Minecraft.

I would like to see the straw golem. It harvests your crops for you. You make it with a hay bale and a pumpkin. It drops wheat.

I would like to see the oretoise. It spawns in caves. It's a tortoise with a type of ore on its shell. You can mine the ore with a pickaxe. If you hit it, it attacks you. It drops nothing.
