In Northern Europe we drink the Birch, maple and few other trees water in spring. It's very delicious.

You can do it with any maple tree, not just sugar maple but sugar maple has the most sugar. Actually, big leaf maples have the largest sap flowing season from November to March. This year I’m going out and tapping trees in my town and making syrup.

In Quebec, every year in spring it's the maple sirup time or, as we call it "le temps des sucres". We go to "cabanes à sucre", which are the place where they make maple sirup, with our families and we eat a big and savoury lunch. Then, we go outside and eat this toffee, or "tire d'érable", on some snow (not like her tho, it doesn't look good in her cup).

When I was a kid; we use to collect sticks to keep the fire going and we def used buckets.
My grandparents and my great uncle use to do it ever year with the maple trees on their property.
So yum!!!

Yes, you can drink the sap directly from the trees -- but it'd be like drinking maple water. The slightest whisper of maple flavour / sweetness, but almost entirely water.

In case anyone's wondering, starting sap to final syrup is a 40 to 1 ratio (meaning, for simplicity's sake, let's say you want a gallon of syrup. You'll need 40 gallons of sap to boil down, as the water content is so high. Most healthy maples can give you around 10 gallons of sap -- so you don't need many maple trees, just a lot of their sap).

I already knew how maple syrup is made thanks to an episode of curious George I actually used to think the syrup was sweet from the moment it came out of the tree just like he did. (Of course I was smol but I still remember learning about it)

Sugar content depends on the time of the season. Sometimes the Sap can l can be up to 5%.

My family still uses the bucket method, and we use a small outdoor fire. We only make just enough for ourselves and some friends. Maple syrup season is my favourite time of year. 🥰🇨🇦

We went to Bob evens farm in school it was cool showed how they make syrup candles etc from back in the day and now how milk comes about too lol
