Ok I think that the sky gids actually split mort into other personalities or other versions across the multiverse and is slowly reforming himself to a complete state also I think the second life of his is well he literally is the old version in a sense with essences and all and he gains memories back slowly maybe after the shows he his old self as he knows he can fend for himself now

According to the Madagascar commentary, Mort is 37 years old. Not 50. So no, he's not immortal (Infact, that Adam & Eve picture showed two Morts, so it might as well be Mort's ancestors who would later be absorbed by Mort from what we know).
